Tom Hunt is an award-winning eco-chef, writer and climate change campaigner. His Bristol restaurant Poco has won numerous awards including Best Ethical Restaurant at the Observer Food Monthly Awards. He has written for many newspapers and magazines and writes a weekly column for Feast Magazine in the UK Guardian offering ingenious no-waste recipes. He is an experienced speaker and cook at events, including Taste of London, Borough Market, Feastival and Abergavenny Food Festival. He is a campaigner and ambassador for Action against Hunger, Soil Association, Slow Food International and The Fairtrade Foundation. His first book was The Natural Cook (2014). 

This book is beautifully written and illustrated. The foreword is given by Hugh-Fearnley-Whittingstall whom Tom worked with at River Cottage. 

Tom Hunt has three core principles: Eating for Pleasure, Eat Whole Foods, Eat the Best Food You Can. His 'Root to Fruit' approach places the environment as priority while cooking sustainably, healthier and for no extra cost. This is an excellent book and although he lives in England is completely relevant for us in New Zealand.
